Chicken Liver My Way
I grew up eating and enjoying chicken liver, and I love it. But, to my surprise, many people dislike it, maybe because it is an organ. They are scared of trying this organ, or they don’t like the metallic flavour, or they had it cooked poorly, which left them with a bitter experience.
I have been successful on many occasions to help people change their minds about certain foods when I cook them my way. But the liver is a struggle sometimes, so if you are one of those, maybe this recipe would help change your mind.
The liver is nutritious and high in vitamins A, B12, folic acid, iron, copper and zinc. In fact, it is the most nutrient-dense organ meat, which is high in protein and low in calories. Although it has mega health benefits liver should be consumed no more than once a week.

Preparation Time: 10 minutes
Start to finish: 30 minutes
Ingredients:
1-kilogram chicken liver
1 white onion
1 red bell pepper
1 big tomato
3 tablespoons olive oil
Chilli pepper
1 teaspoon cumin powder
1 ½ teaspoon coriander powder
½ teaspoon 7 spice powder
½ teaspoon black pepper
2 teaspoons Himalayan salt
1 cup chopped coriander leaf
Lemon juice
Method:
· Clean the liver from fat and any blood clots and cut in half.
· Slice the onion and peppers, set aside. Cut the tomato into wedges.
· Heat the oil in a frying pan and sauté the onions for a minute or so on medium heat.
· Add the peppers and saute for a further minute or so.
· Add the chicken liver and sauté turning them over every minute or so and add the spices and salt. After a few minutes add the tomato wedges.
· To know if the liver is cooked, make an incision in the thickest part of a piece of liver, if it is pink as I prefer it, then it is cooked. If you like it, well-done , cook for a further few minutes.
· Adjust salt, add the chopped coriander and finish with a squeeze of lemon.
Notes:
· You can add as much or as little vegetables you like.
· You can add chicken hearts along with the liver.
