Tomato Bruschetta

Bruschetta is a simple Italian appetiser, nothing fancy, nothing complicated and nothing overwhelming to prepare. It is a dish enjoyed by everyone, young and old and takes no time. It requires no skill and relies on the quality of the bread, the olive oil, and the star ingredient, TOMATOES. You can add any toppings you fancy; I always encourage people to add their finishing touches, but this is the authentic way of making and presenting it. If you find Italian bread even better.

To enjoy a delicious bruschetta, don’t compromise on the ingredients' quality and make sure the bread has the right crisp and always serve it immediately before the bread gets soggy.

Bruschetta is the perfect start to entertaining, whether lunch, dinner, bbq or a party. Please give it a go.

Preparation Time: 10 minutes

Start to finish: 11 minutes.

grilling: 1 minute

Ingredients:

  • 3 half baguettes or any Italian bread

  • 4 medium ripe tomatoes

  • 8 basil leaves

  • pinch salt

  • 1 clove garlic

  • 6 tablespoons Extra virgin olive oil

Method:

· Slice the baguette in half, as seen in the video and drizzle the open side with olive oil. If using country bread, slice into 2 cm slices.

· Heat the barbeque to medium heat and place the oiled bread side down; cover and grill for one or so minutes until golden brown.

· Chop the tomatoes finely and add the basil and salt and continue chopping.

· When the bread is toasted, rub the surface with the garlic clove, then top with the chopped tomatoes, slice and serve immediately. Add more olive oil if desired.

Notes:

· other methods for toasting bread include under the oven grill, on a griddle or in a frying pan and even in the bread toaster.

· If you don’t like the texture of tomatoes, just slice the tomato in half and rub it on the toasted bread.

· You can experiment with any toppings you fancy.
