Hot Chocolate Fondant
Hot chocolate fondant - who doesn't adore it? These pots are exquisite, decadent, gooey, chocolaty and devilishly good, not ideally healthy, but good for the soul. Some may even describe them as fuel for the soul. But what is it? It is cake batter with less flour than a cake; I say: "it is heavenly chocolate held together with eggs, butter and a touch of flour.
They are easy to make, the trick is to bake them correctly, too little and they will collapse as soon as they are turned over, baked too much it will become a not a brownie not a fudge kind of dessert.
What chocolate to use?
Dark chocolate (which is minimum cocoa60%) is loaded with antioxidants, rich in minerals such as iron, magnesium, copper potassium and manganese, and it increases the serotonin level in the brain which is responsible for happiness and moods. If you prefer milk chocolate, then you must reduce the amount of sugar.
This dessert is my easy entertaining dessert as I can prepare it ahead of time and bake before serving with ice cream, berries of just a strawberry coulis. Regd notes below.

Ingredients:
7 tablespoons Lurpak soft
5 tablespoons cocoa powder for dusting
100 grams chocolate 60% minimum cacao
3 eggs
1 egg yolk
8 tablespoons sugar
13 tablespoons all-purpose flour
1 teaspoon vanilla
1 tablespoon Lurpak soft for buttering the ramekins
Method:
· Preheat the oven to 160 c fan setting.
· Break the chocolate into smaller pieces if using a block.
· Butter the ramekins with one tablespoon of butter and sprinkle with cocoa powder.
· Melt the chocolate and butter in a Bain marine.
· Beat sugar and eggs till fluffy using a wooden spoon till smooth then add vanilla.
· Incorporate the melted chocolate mix and gently fold in the flour
· Using a metal spoon divide the batter between the ramekins, filling no more than ¾ of each pot, place on a tray and bake for 12 minutes.
· Turn over on a plate immediately and serve with ice cream, berries or strawberry coulis and serve hot.
Notes:
· You can prepare the pots ahead of time and bake them last minute.
· You can place them in the fridge then bring to room temperature before baking.
· If you use milk chocolate, reduce the amount of sugar.
· Never overfill the ramekins.
· Sometimes ovens have different heat try 12 minutes and learn the behaviour of the range.
