My household loves waking up on a Friday morning to the smell of freshly baked pastries or muffins, so would yours...who doesn’t…Who can resist indulging in a couple with a morning cup of coffee? This is an easy and fun recipe to get the children involved and entertained on the weekend, you will also enjoy baking my blueberry, butternut squash or banana muffins.

Preparation Time: 20 minutes

Start to finish: 40 minutes

baking: 20 minutes

Ingredients:

  • 300 grams puff pastry

  • 1 recipe creme pâtissier

  • 200 grams blueberries

  • 3 peaches

  • 3 tablespoons apricot jam

Method:

· Preheat oven 180 C fan setting

· Roll the pastry to a 3 mm thickness then cut out rounds to the size you fancy, then lay on grease paper-lined baking tray.

· Place a spoon of creme pâtissier in the centre and top with some berries or sliced peach.

· Bake in the oven for 20 minutes.

· Brush some apricot jam over the peach pastries to glaze.
