Mezze is the Middle Eastern version of Spanish tapas. Aside from the elevated flavours of mezzes, most are served at room temperature, and this makes them a perfect choice for entertaining crowds, as many mezza can be prepared ahead of time such as hummus, mutabal, beetroot dip, kishkeh, fasoulia bil zait, lib kusa, kibbeh, lentil kibbeh, loubieh and many others. Mezzes were my grandmother’s favourite. Little did I know when I was a child that it was because she was vegetarian. She loved them all with passion and passed on that passion to us.

Foul m’alla is the Syrian word for “sautéed broad beans” this recipe is an authentic interpretation of healthy, quick and easy. It consists of five ingredients yet carries so much flavour and screams deliciousness despite its simplicity. It is a summer dish and is traditionally eaten by hand using flatbread as a vessel to fill in morsels instead of a spoon accompanied by plain yoghurt. My chapatti recipe is a healthy alternative to white bread.

Suitable for type 2 diabetes when consumed in moderation.

Preparation Time: 20 minutes

Ingredients:

  • 1/2-kilogram shelled broad beans, Fresh or Frozen

  • 4 minced cloves garlic

  • 1 cups coriander leaf chopped

  • 3 tbs extra virgin olive oil

  • 1 tsp. salt

  • 1 tsp. sugar


Method:

· In a frypan heat, the olive oil then add the broad beans, salt and sugar, cover and stir on medium heat every now and again until the beans are cooked around 15 to 20 minutes. If the beans are not tender, add a ¼ cup water.

· When cooked, add the minced garlic and coriander and cook for 1 minute.

· Serve hot or cold with plain yoghurt on the side and pita bread.

Notes:

· The amount of garlic and coriander can be modified to suit your taste.

· If using frozen broad beans, place in cold water and allow them to thaw before cooking.

· Broad beans are suitable for type 2 diabetes when consumed in moderation.
